White Potatoes – Good or Bad?
Many are afraid to eat white potato. Others swear it does them good. Let’s have a little look…

The only time I’ve ever been tempted to peel a potato is when I know they are not organic. I worry about the toxins in and on the skin, but other than that it doesn’t occur to me to peel it.
My mother never peeled her potatoes neither so you could say I’m totally used to it. And good for me! Ha ha! The skin is full of goodness and should never be discarded. Cherish it. Look for ways to use it.
How do you cook your potato?
I often steam but will just as often cook it in a little water. I never soak a potato as many do, usually after they have peeled it. Wow, what a great way to leach out the nutrients. No way! I usually cut it up and pop it straight in the saucepan in as little water as I think I can get away with without burning it. This means that most of the potato actually steams.
Then what do I do with the water… tip it down the sink?
No way again! If I’m going to mash the potato I mash it using the potato water. I also add some butter and Himalayan salt and blend it. Yum… the skin has been completely blended throughout the mix and it’s soft and creamy and oh so flavoursome with those extra nutrients from the potato water. But even if I mash by hand and the potato skin is still in it, it doesn’t bother me because it tastes fine.
You can also cook up some potato skins and save the water to use for many conditions. As it’s very high in nutrients it’s great for skin conditions etc. Once again I would stress you use organic otherwise you are getting more than you bargained for.
